No-Bake Mocha Almond Fudge Energy Bars

These homemade energy bars have delicious mocha, almond fudge flavors and better yet are no bake!

Ingredients

  • 2 ½ cups 410 grams pitted dates
  • ¾ cup Whole Natural Blue Diamond Almonds**
  • 2 tablespoons unsweetened cocoa powder
  • 1 packet 1 teaspoon instant coffee granules
  • Optional: ¼ teaspoon salt
  • Optional: 2 teaspoons miniature dark chocolate chips for topping

Instructions

  • Line a small square dish (about 7x7 or 8x8) with parchment paper.
  • Place all ingredients in a food processor and pulse until completely combined and a sticky dough forms.
  • Remove from food processor and spread evenly in prepared pan. Press firmly into pan. If desired, sprinkle with chocolate chips and press lightly into the bars.
  • Cover with plastic wrap and refrigerate for at least 2 hours before slicing into squares.

Notes

**If you like more of a salty-sweet bar, you can also use Blue Diamond Salted Almonds. I have used both types of almonds and they work equally well, depending on your taste preference!
