These homemade energy bars have delicious mocha, almond fudge flavors and better yet are no bake!

Ingredients
2 ½cups410 grams pitted dates
¾cupWhole Natural Blue Diamond Almonds**
2tablespoonsunsweetened cocoa powder
1packet1 teaspoon instant coffee granules
Optional: ¼ teaspoon salt
Optional: 2 teaspoons miniature dark chocolate chips for topping
Instructions
Line a small square dish (about 7x7 or 8x8) with parchment paper.
Place all ingredients in a food processor and pulse until completely combined and a sticky dough forms.
Remove from food processor and spread evenly in prepared pan. Press firmly into pan. If desired, sprinkle with chocolate chips and press lightly into the bars.
Cover with plastic wrap and refrigerate for at least 2 hours before slicing into squares.
Notes
**If you like more of a salty-sweet bar, you can also use Blue Diamond Salted Almonds. I have used both types of almonds and they work equally well, depending on your taste preference!
