Cranberry Pecan Corn Pudding

Ingredients

  • 2 tablespoons Horizon Organic butter melted
  • 1/3 cup maple syrup
  • 3 eggs
  • 1 ½ cans about 22 ounces cream style corn
  • 1 ½ cups Horizon Organic whole milk
  • 3 tablespoons white whole wheat flour can also use all-purpose flour
  • ½ teaspoon salt
  • 1 cup 5 ounces dried cranberries
  • 1 cup 4.5 ounces finely chopped pecans

Instructions

  • Preheat oven to 350 degrees F. Spray a 2-quart casserole dish with cooking spray and set aside.
  • In a large bowl, whisk together melted butter, maple syrup, eggs, corn, and milk.
  • Whisk in the flour and salt, and then fold in the cranberries and pecans until completely combined.
  • Pour into prepared casserole dish.
  • Bake uncovered for about 1 hour.
