An old fashioned favorite, this Ground Beef Casserole with Cornbread Crust is an easy dinner recipe that the entire family will love!

Ingredients
For the Filling:
  • 1 lb. ground beef
  • 1 large onion, chopped
  • 1 (11 ounce) can corn kernels, drained
  • 1 (10.75 ounce) can condensed tomato soup, NOT diluted
  • 1 cup water
  • 1 tablespoon chili powder
  • 1 teaspoon salt
Cornbread Topping:
  • ¾ cup cornmeal
  • 1 tablespoon all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 large egg
  • ½ cup milk
  • 1 tablespoon canola oil (or other mild oil of choice)
  • Optional garnish: grated cheddar cheese, sour cream, parsley or cilantro, chopped red onion, sliced green onion
Instructions
  1. In a large skillet over medium-high heat, cook the ground beef and onion until meat is no longer pink (about 7-10 minutes). Drain.
  2. Stir in the corn, tomato soup, water, chili powder and salt. Reduce heat to low and simmer for about 15 minutes.
  3. Transfer the beef mixture to a lightly greased 2-quart casserole.
  4. In a medium bowl, mix together the cornbread topping ingredients. Spread batter over the beef mixture.
  5. Bake at 425 degrees F for 18-20 minutes, or until golden brown and topping is cooked through.
