An old fashioned favorite, this Ground Beef Casserole with Cornbread Crust is an easy dinner recipe that the entire family will love!

For the Filling:
  • 1 lb. ground beef
  • 1 large onion, chopped
  • 1 (11 ounce) can corn kernels, drained
  • 1 (10.75 ounce) can condensed tomato soup, NOT diluted
  • 1 cup water
  • 1 tablespoon chili powder
  • 1 teaspoon salt
Cornbread Topping:
  • ¾ cup cornmeal
  • 1 tablespoon all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 large egg
  • ½ cup milk
  • 1 tablespoon canola oil (or other mild oil of choice)
  • Optional garnish: grated cheddar cheese, sour cream, parsley or cilantro, chopped red onion, sliced green onion
  1. In a large skillet over medium-high heat, cook the ground beef and onion until meat is no longer pink (about 7-10 minutes). Drain.
  2. Stir in the corn, tomato soup, water, chili powder and salt. Reduce heat to low and simmer for about 15 minutes.
  3. Transfer the beef mixture to a lightly greased 2-quart casserole.
  4. In a medium bowl, mix together the cornbread topping ingredients. Spread batter over the beef mixture.
  5. Bake at 425 degrees F for 18-20 minutes, or until golden brown and topping is cooked through.
Recipe Notes
  • You can substitute ground turkey or ground chicken for the ground beef called for in this recipe.
  • For a shortcut, use an 8.5-ounce box of Jiffy corn muffin mix (prepared according to package instructions) for the top of your casserole.
  • There is no sweetener added to the cornbread topping. I think that the savory crust is a nice contrast to the slightly-sweet filling. If you prefer a sweet cornbread, you can add about 1 - 2 tablespoons of sugar to the batter.
  • To prepare the casserole in advance, make the filling as instructed and place it in the baking dish. Cover and refrigerate until ready to bake. Before baking, allow the filling to sit on the counter at room temperature for about 30 minutes. Then stir together the topping and bake as instructed.
  • Once baked, the ground beef casserole will keep in the refrigerator for 3-4 days.
  • This casserole can be frozen after baking. Wrap any leftovers in an airtight container and freeze for up to 3 months.
  • To reheat ground beef casserole: thaw frozen casserole in the refrigerator overnight. Then place the casserole in a 325 degree F oven and heat just until warm -- about 20 minutes. If the topping starts to get too brown before the filling is heated through, cover loosely with foil.
