Ingredients

  • 1 lb. ground turkey (I used white meat ground turkey breast, but any version will work)
  • 1 egg
  • ½ cup finely minced onion
  • 2 tablespoons Italian seasoned breadcrumbs
  • 1 tablespoon Parmesan cheese
  • ¾ teaspoon salt
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon pepper
  • 2 tablespoons ketchup

Instructions

  • Preheat oven to 500 degrees F. Line a rimmed baking sheet with parchment or spray with cooking spray.
  • In a large bowl, use a fork or your fingers to gently combine all ingredients. Be sure that you don’t overmix the meat mixture or it will be tough and dry.
  • Using a teaspoon or melon baller, shape turkey mixture into 1-inch balls. Drop on prepared pan.
  • Bake, uncovered, for 6 – 8 minutes.

Notes

Have Leftovers? The extra meatballs freeze really well!
