Preheat oven to 400 degrees F. Spray an 8-inch or 9-inch square baking dish with cooking spray.
In the prepared dish (or in a separate bowl), stir together all of the uncooked ingredients until completely combined.
Cover tightly with foil and bake for 50 mins.
Remove foil, stir, and return to the oven (uncovered) for 5-10 more minutes, or until rice is tender and most of the liquid is absorbed.
Fluff with a fork, allow to sit for about 5 minutes, garnish with sliced green onion, and serve!
Notes
If you prefer to start with cooked, diced chicken, that will work too! It's a great way to use up leftovers from another meal or a store-bought rotisserie chicken.
Instead of chicken, you can substitute with sliced andouille sausage or kielbasa sausage. I recommend browning the sausage in a skillet before adding it to the rice mixture.
Feel free to add other vegetables or seasonings to your dish. You can stir in corn, diced tomatoes or green beans, for instance.
The total cooking time may vary, depending on the size and type of dish that you use, as well as your oven. You will know that the rice is done when it's tender and most of the liquid has been absorbed.
To feed a larger family, double all of the ingredients and bake the dirty rice in a 9 x 13-inch dish.
