Oven-Roasted Sesame Broccoli

This Oven-Roasted Sesame Broccoli is always a winner in our house. It's super easy to whip up is full of flavor and better yet goes with almost any entree!

Ingredients

  • 1 lb. fresh broccoli florets or frozen broccoli florets that have been thawed
  • 1 medium red bell pepper chopped
  • 2 tablespoons sesame seeds
  • 1.5 tablespoons rice vinegar
  • 1.5 tablespoons sesame oil
  • 1.5 tablespoons soy sauce
  • 1/4 teaspoon salt

Instructions

  • Place broccoli and red pepper on sheet pan coated with cooking spray. Combine the remaining ingredients. Drizzle over vegetables; stir to coat.
  • Bake, uncovered, at 425 degrees F for 10-12 minutes, or until vegetables are tender. Stir once about halfway through cooking.

Notes

Cooking Just for Two? You can cut the ingredients in half and follow the same cooking instructions.
Note: Don't omit the sesame oil! You can buy it in very small bottles on the International foods aisle at just about any grocery store, and it's so versatile in a variety of Asian dishes. It gives the broccoli such wonderful flavor!
