Deep Dish Cheeseburger Pie

  • 1 lb. ground beef
  • 1 small onion diced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 14.5 ounce can petite-diced tomatoes
  • 1 cup shredded cheddar cheese divided
  • ¼ cup ketchup
  • 1 8.5 ounce pkg. corn muffin mix
  • 1 egg
  • ½ cup milk
  1. Preheat oven to 400 degrees F.
  2. In a large skillet over medium-high heat, brown ground beef and onion until no longer pink. Drain.
  3. Return meat to the skillet and stir in salt, pepper, diced tomatoes, ¾ cup of cheese, and ketchup.
  4. Spoon beef mixture into a 9-inch deep-dish pie plate that has been sprayed with cooking spray. Sprinkle remaining ¼-cup cheese over top of beef mixture.
  5. In a medium bowl, combine corn muffin mix, egg, and milk and mix well. Spoon batter over top of pie.
  6. Bake for 25-30 minutes, or until top is golden brown. Let stand about 5 minutes before serving.
