A delicious and easy zucchini pie that's perfect for lunch, dinner or snacks

Ingredients
  • ½ cup canola oil
  • 4 eggs
  • 1 cup all purpose baking mix (such as Bisquick)
  • ½ cup Parmesan cheese
  • ½ cup shredded Cheddar cheese
  • 1 small sweet onion, diced
  • 3 cups zucchini, sliced very thin
Instructions
  1. Preheat oven to 350°F (180°C). Spray a 9-inch pie plate with cooking spray and set aside.

  2. Combine all ingredients in a large bowl. Pour into prepared dish.
  3. Bake for 40-45 minutes, or until cooked through and golden brown.

I love to use my mandoline slicer to get really thin, perfectly even slices of zucchini FAST.
