Ingredients

  • 1 egg
  • 1 cup White Chocolate-flavored P28 High Protein Pancake Mix
  • ¾ cup unsweetened vanilla almond milk can substitute with regular milk or other non-dairy milk of choice
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • ¼ teaspoon vanilla
  • ¼ cup fresh or frozen raspberries plus extra for garnish

Optional Toppings:

  • Additional raspberries
  • White chocolate chips
  • Maple syrup
  • Buff Bake White Chocolate Peanut Spread melted in the microwave until smooth and pourable (about 15-30 seconds)

Instructions

  • Heat oven to 400°F (200°C) and spray an 8- or 9-inch square baking dish (or a 9-inch round pie plate or cake pan) with cooking spray.
  • In a medium bowl, beat egg with a whisk. Beat in pancake mix, almond milk, salt, cinnamon, and vanilla.
  • Pour batter into prepared dish and sprinkle with raspberries.
  • Bake for 15-20 minutes, or until edges are golden brown.
  • Slice, garnish with desired toppings, and serve warm.
