This super easy rice and beans is ready in only 20 minutes and can easily be adapted with your favorite toppings!

Ingredients
  • 1 lb. lean ground beef or can substitute with ground turkey or chicken -- *SEE NOTE for a vegetarian option!
  • 4 cloves garlic minced
  • 1 onion chopped
  • 1 15 ounce can tomato sauce
  • 2 tablespoons cumin
  • 1 tablespoon chili powder
  • 1 4.5 ounce can chopped green chilies
  • 1 15 ounce can pink beans, drained and rinsed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • For serving: cooked rice; shredded cheddar cheese; sliced green onions; sour cream; hot sauce
Instructions
  1. In a large skillet, brown meat with onion and garlic. Drain.
  2. Add remaining ingredients.
  3. Simmer for 5-10 minutes.
  4. Serve with rice. Top with cheese, sour cream, green onions, and/or hot sauce.
Recipe Notes

*For a vegetarian option, replace the meat with an additional can of beans.
