These Sloppy Joe Stuffed Shells are a fun and easy twist on the classic family-friendly dinner! With pasta, meat, and veggies baked together in one dish, it’s a great freezer meal or make-ahead supper to enjoy on your next busy night!
You guys…Sloppy Joes are SUCH a blast from my past! I have vivid memories of my mom and my grandmother serving them for dinner, and now I have carried on that same tradition with my own family. There’s just something about the hearty, sweet, and tangy sauce that makes kids (and adults) smile!
These Sloppy Joe Stuffed Shells are a great make-ahead option too, since they can be frozen or kept in the refrigerator overnight and just baked when everyone is tired and hungry at the end of the day…again, bringing your attention back to what’s important: the family!
Instead of a marinara sauce, I prepared this dish with a Manwich Bold sauce and some ground beef.
The shells are stuffed with more ground beef, peppers, onions, and two types of cheese…and topped with the Manwich sauce and even MORE cheese!
The end result is a simple, comforting, and family-friendly dinner that is the perfect solution for your next #ManwichMonday – and a great way to kick off the week!
Sloppy Joe Stuffed Shells + A Giveaway!
Ingredients
- 20 uncooked jumbo pasta shells
- 1 pound lean ground beef or ground turkey
- 1 large onion chopped
- 1 green bell pepper chopped
- 1 ÂĽ cups reduced-fat ricotta cheese
- 1 ½ cups 6 ounces shredded reduced-fat cheddar cheese, divided
- 1 egg lightly beaten
- 1 can 14 ½ ounces petite-diced tomatoes, drained
- 1 can sloppy Joe Sauce
Instructions
- Cook pasta according to package directions to al dente; drain and rinse in cold water.
- In a large skillet, cook the beef, onion, and green pepper over medium heat until meat is no longer pink; drain.
- In a large bowl, combine the ricotta cheese, 1 cup cheddar cheese, egg and half of the beef mixture.
- In a small bowl, combine the tomatoes and Manwich Sloppy Joe Sauce. Spread Âľ cup of the sauce mixture into a 13-in x 9-in baking dish coated with cooking spray.
- Spoon cheese mixture into pasta shells; place in baking dish.
- Combine remaining beef mixture and sauce; spoon over shells. Sprinkle with remaining cheese.
- Cover and bake at 350 degrees for 40 minutes. Uncover; bake 5-10 minutes longer or until cheese is melted.
- Note: This meal can be prepared in advance and kept in the refrigerator overnight. When ready to bake, remove from the refrigerator and allow to sit on counter for 30 minutes before baking (covered).

I have always used Manwich sauces, and really like the cornbread sloppy joes, which I have made with both ground turkey and ground sirloin.

My favorite is the sloppy joe biscuit bake. I always just assumed Manwich was strictly for Sloppy Joes, but as I looked through the recipes I see that isn’t the case by a long shot.

I like the Saucy Meatloaf recipe
I absolutely loved the Saucy Meatloaf and Chuckwagon Beef & Bean Skillet! But since I use Manwich & have used the Bold & Spicy, it’s a safe bet that I’ll be trying a few others!! Thanks for the chance to win! But I would’ve tried them anyway, just because it makes dinner quicker and tastes great in different foods!
How do you choose a favorite? 🙂 They all look great, but one that I really want to try, after I make these stuffed shells, is the Chuckwagon Beef and Bean Skillet. We love one pot/skillet dinners and if it has a southwestern or Tex-Mex flavor to it, that is even better!

I like the SLOPPY JOE STUFFED BAKED POTATOES recipe. I make something similar to this. I use mozzarella cheese instead of the cheddar cheese. This is a filling meal when paired with a nice green salad.
