Today I’m sharing one of my favorite healthy recipes that is absolutely perfect for your busy mornings. It’s “resolution season,” after all, and this Frittata with Smoked Salmon and Spinach is a great way to get some protein, veggies, and healthy fats into your diet with very minimal effort. Paired with a wholegrain English muffin or toast and some fruit, it’s a meal that will power you through your day and will help you work towards your 2015 goals.

Are you familiar with the frittata? It sounds fancy, but it’s actually just a crustless quiche…i.e., an easy way to bake a lot of eggs at one time. You toss together some eggs and any other ingredients that sound good, put them in an oven-proof skillet, and bake them until set. Sliced into wedges, the frittata is a great breakfast or brunch option, but it’s also perfect for a weeknight dinner. Frittata is delicious warm from the oven, but it’s also just as good at room temperature.

Do you need any other reasons to try this recipe? I love that a frittata is incredibly versatile! I can basically clean out the left-over meats and veggies in my refrigerator and create a new flavor combination each time. Ham, cheese, and onion? Delicious! Sausage, bell peppers, and mozzarella? Also tasty! You get the idea…

And if you happen to have any left-overs, just keep the frittata wedges in your refrigerator and re-heat them for breakfasts throughout the week. I like to use the extra slices in breakfast sandwiches, since I just have to microwave the frittata to warm it up, toast an English muffin, and throw on a slice of cheese! It’s easy, delicious, and it fits perfectly into my healthy-but-crazy-busy life!
