Plus, when I make my own bars, I can flavor them however I like! That's why I crammed some of my favorite things into one delicious little package here -- coffee, chocolate, and almonds! Salty-sweet-moist-chewy and oh-so-good!

No-Bake Mocha Almond Fudge Energy Bars
- 2 ½ cups 410 grams pitted dates
- ¾ cup Whole Natural Blue Diamond Almonds**
- 2 tablespoons unsweetened cocoa powder
- 1 packet 1 teaspoon instant coffee granules
- Optional: ¼ teaspoon salt
- Optional: 2 teaspoons miniature dark chocolate chips for topping
- Line a small square dish (about 7x7 or 8x8) with parchment paper.
- Place all ingredients in a food processor and pulse until completely combined and a sticky dough forms.
- Remove from food processor and spread evenly in prepared pan. Press firmly into pan. If desired, sprinkle with chocolate chips and press lightly into the bars.
- Cover with plastic wrap and refrigerate for at least 2 hours before slicing into squares.
