Let’s be honest, Moms: we could all use a little bit of help! If nothing else, having 3 kids in less than 4 years taught me that being a Super Mom means asking for assistance when I need it and putting others in charge sometimes. No matter how high I set my expectations, the fact remains that I just cannot do it all on my own!
That’s why, when my boys were recently home on a Friday morning for a school break, I put them to work in the kitchen. When they nagged me for a snack, I instantly got them involved in creating their own delicious treats. Working with the kids to prepare these Strawberry-Chocolate Mousse Crackers was such a fun and easy way to keep the children busy, show them a few tricks in the kitchen, and teach them some responsibility. In about 15 minutes we were feasting on unbelievably tasty spring treats!
The snacks come together with just a handful of basic pantry staples, which I picked up on a recent shopping trip at Kroger. Love that store! You’ve heard me say on here many times before — if I can grab a coffee from the in-store cafe while shopping, it’s an added bonus. Casey was with me on this particular trip, so I treated him to a smoothie while we shopped. Unfortunately, he spilled about half of it on the floor just as we were finishing up our trip. Classic, right?! Bright pink melted smoothie all over the aisle — in one of the busiest parts of the store. UGH. I was so embarrassed, but the nice folks at Kroger helped me wipe up the sticky mess quickly and we were on our way again. Just another day in my life!
RITZ Crackers has always been a favorite in our house, thanks to the buttery, salty, and slightly sweet crunch in every bite. My mom served them to our family when I was growing up (often with peanut butter on top), and now they are a regular lunchbox addition for my own boys.
My personal preference are the Fresh Stacks boxes, which keep the crackers…fresh!
Since the boys were home from school on Friday and looking for something to eat, I knew that they would have fun with this delicious chocolate mousse treat — recipe courtesy of my friends at RITZ Crackers! I can’t take credit for the original recipe, but OH MY GOODNESS…I can vouch for the AH-MAZING taste! The batch did not last long in our house!
I started by folding together thawed whipped topping and melted semi-sweet chocolate. It created this perfectly fluffy chocolate mousse “frosting” that we now want to slather on everything.
I then put the chocolate mousse in a pastry bag with a star tip for 7-year-old Gibbs to pipe onto the crackers. This was his first experience with a pastry bag and he did a great job! But don’t worry if your kitchen isn’t stocked with cake decorating supplies — a big zip-top plastic bag will work perfectly (just snip off one corner with scissors).
Then it was Casey’s turn to get to work! My berry-loving boy was thrilled with the task of topping each RITZ Cracker with sliced strawberries.
And even 3-year-old Spence got in on the action! He garnished each Strawberry-Chocolate Mousse Cracker with miniature chocolate chips, because more chocolate is always a good idea…
While the end result is a beautiful, fancy-looking dessert that’s special enough for a holiday or party, the process is so simple that these crackers are equally appropriate for snack time with the little ones. It’s the perfect way to get some help from your family in the kitchen, with a sweet reward at the end!

- 2 ounces semi-sweet baking chocolate, melted
- 1½ cups thawed frozen whipped topping, divided
- 24 RITZ Crackers
- 12 strawberries, sliced
- 24 small fresh mint leaves
- Optional garnish: miniature semi-sweet chocolate chips
- Whisk chocolate and ½ cup of whipped topping just until blended. Stir in remaining whipped topping.
- Spoon into pastry bag fitted with star tip; use to pipe chocolate mixture onto RITZ Crackers.
- Top with strawberries and mint.
Special Extra: Top each topped cracker with a few miniature semi-sweet chocolate chips before serving.
