Don’t you just love Mediterranean ingredients? Everything that you see here is a staple in my kitchen. I never tire of these items! I love that I can add fresh veggies, black olives, or feta cheese to salads, dips, sandwiches, pasta…and pita bread…and I know that the dish will always turn out delicious. Plus, even though these ingredients are packed with flavor, they are also full of nutrients. Healthy and tasty? Sign me up!

These Greek Pita Bread Bites Are Packed With Goodness!

Olives are one of the most quintessential and versatile Mediterranean ingredients, and they contain monounsaturated fat — the good fat! California black ripe olives are loved for their unique flavor, texture, and color. Not only do they taste delicious, but they contain vitamin E, iron, vitamin A, and fiber. I have provided this idea to show you one of my favorite ways to utilize Mediterranean ingredients in our own kitchen, but these are definitely loose instructions. The process is so easy that it hardly requires any direction at all!

This quick, no-cook option is a perfect example of a snack or light lunch that I might throw together on a normal day. I always have these ingredients on hand, and I know that they all taste good together.

It’s an easy go-to solution when I’m rushed, tired, and starving! Plus, it looks fancy enough to serve to my girlfriends with a glass of wine during those afternoon play dates! 🙂

How To Build You Greek Pita Bread Bites

I love to use the small whole wheat pitas as a base for all of my toppings because they are easy to pick up with one hand, and you can also slice them into little triangles for bite-sized appetizers.

A layer of hummus acts as the glue for all of your delicious toppings. Just pull a can of California Ripe Black Olives from your pantry, drain off the extra liquid, and pile those gems high on top of your pita!

Then just sprinkle the dish with some fresh herbs (whatever is growing in your garden this season!!), and a few of your favorite vegetables. Use what you prefer — you can’t mess these up! Since we have mass quantities of tomatoes and cucumbers in our yard at the moment, those were a given here.

And I love the sweet and zesty bite of the red onion, but you could easily skip that if you’re not looking for such a strong flavor. Bell pepper or diced zucchini would also be great. And don’t forget the tangy, creamy feta! It’s just that perfect final touch.

These Greek Pita Bread Bites are so easy and delicious they're perfect for whipping up for a quick appetizer or snack.

Ingredients
  

  • 8 1-ounce miniature whole grain pita pockets
  • ½ cup hummus
  • 1 2.25 ounce can sliced California Black Ripe Olives, drained
  • ¼ cup finely diced red onion
  • 1 cucumber chopped
  • 1 cup halved grape tomatoes
  • 4 ounces crumbled Feta cheese
  • Fresh basil and fresh parsley for garnish

Instructions

  • Spread about 2 tablespoons of hummus onto each pita pocket.
  • Drain a can of California Black Ripe Olives and pile them high on top of your hummus!
  • Top with the remaining ingredients, cut into small wedges if desired, and serve immediately.

    This is a great recipe! Being Greek I had to sub in Kalamata olives! They have a great briney/zingy flavor. Also you could make this into a “salsa” put the hummus on the side and serve. Great for a party too! Let everyone make their own! Gives you a a few extra free minutes!
