For this 5 Ingredient Dinners Challenge, I opted for 3 easy meals each week. Every recipe requires only 5 ingredients (or less!), not including salt, pepper, oil, or butter. Some of the recipes will create enough food for you to enjoy as leftovers on other evenings, and I have added plenty of flexibility in the schedule (which we all need). On the nights where there is no specific recipe listed, you can have fun dining out, grab pizza and a movie to go, or whip up any of your family’s other favorite dinners!

I have also included suggestions for side dishes, but you can obviously choose your own favorites where necessary. I love steam-in-the-bag frozen veggies that can be microwaved just before serving; and I almost always opt for wholegrain pasta, brown rice, or wholegrain tortillas and bread when possible. Again, do what works best for you and your family!

  1. What a fun challenge, Blair! I love how you incorporated so many of your easy recipes into this 5 ingredient challenge. Such a great way to find meal inspiration AND use up those pantry staple ingredients! Those barbecue meatballs are calling my name…my husband would LOVE them!

  2. Wow, what an awesome monthly menu plan and recipes. My family and I are in the midst of an unexpected move from one house to another between two cities. We are in that hair pulling state of chaos trying to pack and am overwhelmed with so much to do. Your menu plan came at just the right time. I always like to feed my family good food but am at a low point where fast food might creep in too much. This menu plan will help me sneak in some good meals as we go thru this moving adventure. Looking forward to your future postings! Thank you so much!

    1. Hi, Frances! Wow — you definitely have your hands full with an unexpected move! These meals will be perfect for that situation since they don’t require a fully-stocked kitchen, grocery shopping is fast (and affordable), and prep time and clean up time is minimal. Enjoy the recipes and good luck with the transition!

  3. This is such a great plan! I love how simple the recipes are too as it’s a plan that would be so easy to stick to!
